I am doing some Panama Sisal double stick and wondered what the difference is between Durafit 500 and Durafit 600 - is it just the weight?

    Would anyone suggest anything better?

I am open to correction but I believe it represents the thickness of the product, 5mm or 6mm. I too believe Duralay crumb rubber is the best and most dimensionally stable double stick sub surface to use for natural flooring, though expensive. Never had one on double stick fail or cause problems with 1000's of installations including 100's of Hsl.
I would use perimeter gripper on everything with the exception of seagrass.
