I'd score them up with a grinder or copper disc first.

Its a restaurant, Ardex NA is way to soft for that sort of traffic and point loading.

Would be ardex K15 for me with a suitable primer.

I did a similar job recently. About 1500sq m. I had Uzin out to write me a spec, which was
    L3 system primer (dpm type)
    L3 gold latex.
I laid about 200sq. m on the first day. Some of it failed.
A long story short, we had to hire in grinders, scratch it up to give a key. Some even failed after that.
If I were doing it again, I would scratch with a diamond grinder. Prime with something like Primgrip, then latex.
I think I would also ask advice from Fball or Ardex. Even though I rate there product, I would not trust Uzin to do this again.

So scarification is needed? Can you hire scarifiers? I have only done about 5 lvt jobs and they have all been domestic so this scares me slightly lol

Yes, most hire places have them. There is a charge to hire the machine, then a charge per mm for the disc
